the wonderful recipe Salina by which it is named: Ditch the Ferns is the name of the highest mountain of the Aeolian Islands and ferns are just a corollary of the mouth of the volcano.
This recipe has undergone various modifications as is usual in order to better meet the tastes of the younger generation, I have tasted on the spot as it was cooked and I must say, playing a little biased and I wanted to do an encore ... the taste is very particular about proportions and with a few tricks you can make it your own, custom-made ... ..
SPAGHETTI THE PIT OF FERN
For 4 p
- 400 gr spaghetti
- lemon juice ½ large
- ½ cup Marsala Islands
- 1 medium size onion
- a handful of salted capers of Salina
- pecorino cheese
- oil, butter
- salt and pepper.
While noodles are cooking, melt (even in a water bath) the butter with the onion not too finely chopped: I recommend the butter should remain raw, not cooked!
In a ceramic serving beat with a whisk the oil with the Marsala wine or raisins, add onion and butter, washed capers, lemon juice and plenty of grated pecorino.
Season with salt and pepper (to taste then make sure that they will reach even the capers that were salted) and then poured them into the dough but not too much flow.
Serve.
